Baked Mini Cake Doughnuts


Ingredients:
Cake Flour - 1 1/2 cups, sifted
Granulated Sugar - 1/2 cup
Baking Powder - 1 1/4 tsp
Ground Nutmeg - 1/8 tsp
Salt - 3/4 tsp
Buttermilk - 1/2 cup
Egg - 1, lightly beaten
Butter - 1 1/2 tbspns, melted

Method:
Preheat oven to 425F. Spray mini doughnut pan with non stick cooking spray.
In a large mixing bowl, sift together flour, sugar, baking powder, nutmeg and salt. Add buttermilk, egg and butter and stir until just combined. Fill each doughnut cup approximately 1/2 full.
Bake 4-6 minutes or until the top of the doughnuts spring back when touched. Let cool in pan for 4-5 minutes before removing. Finish the doughnuts with glaze or sprinkles.


Vanilla Glaze:
Ingredients:
Confectioners' sugar - 1 cup
Milk - 1 tbspn
Vanilla Extract - 1/2 tsp

Method:
In small bowl, stir together sugar, milk and vanilla extract until sugar is dissolved. Dip each doughnut in the glaze and remove immediately. Let them rest for 10 minutes in the cooling rack.

Cauliflower Kootu


Ingredients:  

Toor Dal - 3/4 cup
Cauliflower - 1 cup
Onion - 1, chopped
Tomato - 1, chopped
Peas - 1/2 cup
Potato - 1
Lime juice* - 2 tbspns
Salt - to taste

*tamarind paste can be substituted

To roast and grind;
Channa dal - 1 tbspn
Coriander seeds - 1 tbspn
Red chilies - 4
Coconut shredded - 1 tbspn

To season;
Oil - 1 tbspn
Mustard seeds - 1 tbspn

Method:
Pressure cook the toor dal and potato in the pressure cooker. Add onion, cauliflower, tomato, peas and boil them in water. Roast and grind the ingredients mentioned in the table. 
Once the vegetables are done add the ground powder. Add the boiled dal, mashed potato and mix well and finally add the lime juice. 
Season with mustard seeds and serve with rice.

Avocado Fries with Spicy Roasted Garlic Dip



Avocado Fries:
Ingredients:
Avocado* - 1
Panko Bread Crumbs - 3/4 cup
All Purpose Flour - 2-3 tbspns
Corn Flour - 1/2 cup diluted in water
Parmesan Cheese - 1 tbspn
Salt & Pepper
Canola Oil for deep frying


*Use the one that isn’t quite ripe yet, and still stiff when squeezing it. 


Method:
Mix the bread crumbs with Parmesan cheese and season with salt and pepper. Take two plates and a bowl.  Put the bread crumbs and flour on the plates and the corn flour mixture in the bowl. Slice your avocado into fry-like chunks, cover with flour, then corn flour mixture  and finally bread it with the panko and put it on a plate. Repeat this until all your avocado is done.

While you are breading everything, get a pan ready on medium-high heat, with enough oil to coat the bottom of the pan. Once the pan is evenly heated, drop all your avocado fries in and cook each side until golden brown!




Spicy Roasted Garlic Dip;
Ingredients:
Garlic - 2 cloves, chopped finely
Butter - 1tbspn
Sour Cream - 3 tbspns
Chili Paste or Sauce - as per taste
Lemon Juice (Optional)

Ingredients:
In a small frying pan on low heat, add butter and  chopped garlic, cooking until browned. Once the garlic is done, add it into a bowl with your sour cream and a few drops of chili paste (add as much or as little as you want, depending on your heat preference). Mix it all together with a spoon, mashing up the garlic as much as you can. Taste it once it is thoroughly mixed, if you feel it needs a little more zing, try adding a few drops of lemon juice.

Virgin Mojitos


Ingredients:
  • 10-15 small fresh mint leaves, plus a sprig for garnish
  • 1 lime, sliced into thin rounds
  • 1 lime, juiced (approx. 1 oz. or 2 tablespoons of juice)
  • 1 oz. (2 tablespoons) simple sugar syrup* 
  • ice, cubes or crushed
  • 5 oz. (10 tablespoons) club soda

*Simple Syrup: Equal parts sugar and water, heated until the sugar dissolves. (Your yield will be the same as the amount of water you use.)

Directions:
Use a tall 14 to 16 oz. glass. Put mint leaves and half of lime slices in bottom of glass. Add lime juice and simple syrup. Use muddler or end of wooden spoon to muddle ingredients, pressing and twisting  5-6 times--just enough to release oils and juices. Fill glass with ice. Pour in club soda. Use long spoon to gently stir from bottom.


For a prettier appearance, slide in additional lime slices and mint leaves. Garnish top with lime slice and mint sprig.

This recipe is on the tart side. If you prefer a sweeter drink, increase simple syrup or reduce lime juice.
